1/2 tbsp curry powder
1 large onion, thinly sliced
30ml (2 tbsp) olive oil
500ml (2 cups) vegetable stock
1 x 410g can tomatoes, chopped a d peeled
4 garlic cloves, crushed
250ml (1 cup) rice
4 large potatoes, chopped and peeled
2 large carrots, chopped and peeled
Any other veggies you want to add
Preheat oven to 180°C.
Heat olive oil over medium-high heat in a flameproof casserole dish.
Add curry powder, onion and garlic, and sauté until onion is translucent.
Add veggies until browned.
Add stock, tomatoes, and season with salt and pepper.
Stir until well combined.
Cover with foil and bake for 25 minutes.
Remove from oven, add rice and stir to combine.
Uncover and return to oven for 20 minutes.
Give a final stir before serving.
Serve and enjoy.
